Mondays have taken on a new level of fun and silliness for me the past month or so; I've been participating in a Flickr group called Bench Monday. My set is here; a great pool of others can be found here. The rules: "Stand on a bench. Make sure it's Monday. Wear something pretty. If you have no bench, improvise. Only pictures taken and added to the group on Monday will be accepted. Extra points for live props, double points for chickens." Take a look at the creativity out there!
After some play time at the beach and taking my Bench Monday photo, I tried out a cookie recipe I read about last week on 3191. The recipe intrigued me because of its many interesting flavor twists not usually seen in cookies: toasted nuts, coconut, maple syrup, 1 TABLESPOON cinnamon...no refined sugar, no eggs, no butter (and can be made without wheat flour). We all found them to be really delicious. Alexi promptly ate three of them, and he is normally very disciplined about what he eats (I have never seen him eat three cookies!).
Oatmeal Chocolate Chip (or raisin) Cookies

2 cups rolled oats
1 cup unbleached white flour or brown rice flour
3/4 cup shredded coconut
1 tablespoon cinnamon
1/4 teaspoon salt
3/4 cup maple syrup
1/2 cup canola oil
1 teaspoon vanilla
1 cup toasted walnuts, chopped
1/2 cup dark chocolate chips or raisins
Oven: 350ºF / 180ºC
Combine oats, flour, coconut, cinnamon and salt. In a separate bowl whisk syrup, oil and vanilla. Pour wet ingredients into dry and combine. Fold in nuts and chips/raisins. Press dough together into small balls and place onto parchment-lined cookie sheets. Bake 16 minutes or until lightly browned.
These get unmanageably sticky to roll unless you wash your hands every six cookies or so.

i read about bench monday on maya*made's blog and love that idea! thanks for the cookie recipe. sounds delicious and moderately healthy. i have a healthy cookie (not an oxymoron!) recipe i use a lot now, so i am happy to mix it up and try this one!

Vegan goodness!! I can't wait to try these...with dried cranberries, maybe?
they look so delicious & healthy... however i'm on a (high) protein diet until i leave to the US but in case i give up (and honestly i might)or if i'm brave enough to bake this for my family and just watch then eat them (they call it mental torture) i keep this recipe in mind !
