So I roasted rhubarb for the first time in my life. Um. It is awesome! I can't get enough of it. So if you're heading to your farmer's market this weekend I suggest you buy some and try it! How to is here.
I love rhubarb roasted. On the sweet side, it is also delicious cooked down and combined with strawberries (also cooked down) for a most delicious pie. You can also do that with rhub. and raspberries. A real summertime treat!
ooh! intriguing! darn, too bad i didn't read this before i went to the market this morning. though i feel like i've not seen rhubarb here for a while. i like the idea of it over rice pudding...cook's illustrated has a great coconut rice pudding that i bet would go great with roasted rhubarb! thanks for posting this!

Rhubarb grows crazy wild around here..... in fact, one of my friends who lives along my dog walk route has lots of rhubarb at her home and I undoubtedly come home with a bag of rhubarb.... xoxo PS her house is for sale now and I need to make friends with the new owners... :)
I had to promise my husband that I wouldn't buy any rhubarb at the Farmer's Market this week....apparently he thinks two bags in the freezer is enough....

yum! looks delicious, i will have to get some this weekend. which farmer's market do you go to?
take some of the leftover cooled rhubarb juices and mix into Prosecco for an excellent summer drink - garnish with a curl of orange rind
also -rhubarb, strawberry and vanilla bean compote is truly divine with buttermilk panna cotta will forward recipe if you like
