A highlight of our weekend was attending a Cuban pig roast at the summer home of friends on Lopez Island; the third they'd had this summer. According to them, it's what Cubans do when they get together. The pig was brined for two days prior to cooking. The boys and I were a bit faint hearted at seeing the pig so we stuck to rice and beans; my mother in law and Alexi report that it was delicious.
Lots of people, laughing, music, eating, beach play...a good time.
mmmm!!!! looks divine!!!! there are often whole roasted pigs here for various festivals. I remember the first time we saw one, my oldest son must have been about two and half or three. I was a little worried that it would be too much for his sensitive nature to handle. And then I was a little shocked when he was first completely fascinated and then threw a temper tantrum because he didn't get to eat it.
sounds like a bunch of fun, but i'm with you. i don't think i would have eaten the pig. i love seeing these pictures because it gets me ready for my trip to lopez next weekend!

The sangria and fried plantains are among my most favorite things to enjoy!! I always seek them out when I am in Aruba. Another Cuban favorite of mine is flan, dripping with caramel sauce.
I agree with you about the pig....in fact I have to go to a 50th birthday party pig roast in Sept. and am also feeling quite faint hearted at seeing the pig too!! Looked like a good time was had by all. Love the photo of the boys on the boat.. xoxo

I think I'd have tried the cuban pig roast, but then, I'm used to my neighbors serving wild board:)!

I haven't been to a pig roast since I was a little girl.
This sounds like a great party, made all the better by the trip out on the boat I am sure!
