Over the weekend we made pomegranate mimosas. This cocktail is perfect for entertaining, as it can be prepared ahead of time (I recommend making at least 15 minutes in advance; the flavor improves with a little extra time to mix). I bought the pomegranate juice at Whole Foods and bought their store brand (365); it was less than half the price of the other brands.
Pomegranate Mimosas
2 cups pomegranate juice, chilled
6 ounces elderflower liqueur
1 bottle sparkling wine, chilled
Mix the pomegranate juice and elderflower liqueur in a pitcher. Add the sparkling wine. Pour into Champagne flutes or wine glasses and serve.
Makes 8 cocktails
The festive red color and the pomegranate flavor make these perfect for the holiday season.

We had something very, very similar for Thanksgiving...your post is a reminder to hunt down some elderflower liquor. I've been meaning to try it for awhile!
I love pomegranates and have been adding them to salads as well as festive sparkly beverages too!

I've been drinking pomegrante juice for a while now,mixed w/cherry juice.
However, for our holiday gathering, I am going to try this recipe. I bet the scent alone is inviting.
Yum! I use lots of pomegrantes during their short season. I'll have to try these during the holidays! It felt like this long weekend went by in a flash!
I can just imagine what a wonderful flavor a fall fruit and a summer flower must have combined together in a cocktail!

oh, yum! thank you for sharing. i am feeling sad this morning, too. lala and mike both had the entire week off last week, giving us 9 days of fabulous, much needed, restorative time together. i just sent them off and, well, finn and i are getting set to clean the house. fun.

Oh yum, I love pomegranates' tart flavor, so refreshing.
I am serving pomegranate mimosas at my holiday hoo-ha (I have a cookie exchange party/brunch each year)! I just read the idea in a magazine this weekend (Southern Living? Could be...) I'm curious about the elderflower liqueur...I would have never thought to add that!

Yum, you know, we had these over the holidays! My sis-in-law made us a special meal one night, and these were our cocktails. We didn't have the elderflower, and we had a thin slice of lemon in each. Delicious! And boy do they go down easy.
